AbstractA study of the Kansas Cooperative Extension's Expanded Food and Nutrition Education Program (EFNEP) was intended to determine the effectiveness of instruction provided by this federally funded program. The program endeavors to benefit low income families by improving participants' food and nutrition practices, behaviors, and food consumption patterns. Only 5.5 percent of the 115 subjects (selected by proportional random sampling and typical of EFNEP participants nationwide) ate the recommended number of servings from the four basic food groups before receiving the instruction, but 22.1 percent of them did so after the instruction. Participants' scores improved an average of 12.2 percent in desirable food and nutrition practices and behaviors after instruction. The 12 lessons of instruction were provided by nutritional assistants, who used one-to-one or small group techniques. The following recommendations were made: (1) repeat the study, using a control group and striving for increased consistency with which data are collected and (2) study the influence of educational level on homemakers' ability to improve as a result of participation in EFNEP.
