Abstract | Designed for those with teaching skills as well as those without and for those with backgrounds in nutrition and those without, this handbook provides information on how to organize and conduct nutrition education and cooking training for the chronically mentally ill. The first section describes the pilot program which developed the handbook, including setting, client characteristics, general discussion of lessons and educational methods, program costs, evaluation, and sources of informational materials. Listings of kitchen equipment for transitional living apartments and basic equipment for each class are provided. The second and major section presents some of the materials used in the six lessons of the program. (Sources for other materials are suggested.) Each lesson contains descriptions of the goals and tools (equipment and ingredients); lesson content described in steps, activities, menu and/or recipes; and discussion notes. Lesson titles include (1) Good Morning Breakfasts, (2) A Bunch of Lunch, (3) Easy Oven Cooking, (4) Thatsa Lotsa Pasta, (5) Shopping Made Easy, and (6) It's Your Choice.
