Abstract | This document reports on the results of tests of nutrition knowledge given to a random selection of Illinois students in the fourth, eighth, and eleventh grades. The assessment included questions measuring student knowledge of nutrients, the role of nutrients in the body, food handling principles, the relationship between food intake and the psychological aspects of food, and the importance of a balanced diet. An analysis is presented of the test results, and recommendations are made for improving the nutrition curriculum in the schools. Sample questions designed to reveal student attitudes toward nutrition are presented for each age group with comments on the responses. Concepts such as food groups, obesity, and the relationship between appetite and hunger were troublesome for the fourth graders and some eighth graders. By the eleventh grade, a definite improvement in the ability to identify the nutrient contribution of each food group was evident. Test results indicated that the study of nutrition should be expanded at all levels, and taught with a multidisciplinary approach. (JD) |
